Filled with cheese or beans, fried golden and crisp, then finished with salsa roja, shredded cabbage and queso on top. Messy in the best way.
Our Story
Villa Madero is a small town in Michoacán, and it's where every recipe on this truck was learned — standing next to a comal, being told "otra vez, pero más delgada." Nothing here came out of a supplier's binder.
We cook in small batches all day long, so what reaches your hand has never been sitting under a lamp. Pull up to the window on S Ankeny Blvd, order, and give us a few minutes — you'll watch it happen.
